This is week 4 on creating a meal plan for the week.  I'm trying so hard to keep up with it.  I'm so proud that we have gotten to week 4.   This is week 3 on creating a meal plan for the week. Yesterday being a holiday has been nice.  It will make this week a little bit shorter.  Yesterday we worked a lot around the house cleaning like crazy. Now that meal planning is becoming part of our life.  I'm now looking carefully at our meal choices and trying to include more and more vegetables. Monday: Lunch Fast food Treat  Dinner: Leftovers from last night dinner Tuesday:  Lunch PB&J and bananas Dinner: Gnoche (freezer meal from trader joes) and Kale (chips or something else) Wednesday:  Lunch Hotdogs Dinner: Potstickers and Corn Thursday: Lunch Pasta Os (from Aldi $.64 a can)  and Black Beans (from Aldi $.64 a can)  Super yummy! Last week's meal plan was a success!  It sure made the week planning easier.  I didn't have to think about dinner since I knew exactly what I was going to make.   Now to repeat it again this week.  When we made something with enough leftovers we would have for lunch or dinner the  next day. Monday: Lunch Soup  Dinner: Minestrone Soup with leftover meat from Taco night Tuesday:  Lunch PB&J Dinner: Tacos again since we have all of the ingredients.  Soft taco shells are only $.99 at Aldi. Wednesday:  Lunch Hotdogs Dinner:  Hotdogs with Chili Thursday: Lunch Pasta Os (from Aldi $.64 a can)  and Black Beans (from Aldi $.64 a can)  Super yummy!   It has been years since I wrote up a formal meal plan.  With the twins being born last spring we were in survival mode whatever we could get our hands on for dinner was dinner.   Sometimes it was frozen pizza, left overs, or cereal.     Now that the boys are eating a lot more baby food and table food it is time to get back on the meal planning bandwagon. Monday: Lunch:  Left over Slow Cooker Chicken Parmesan  Dinner: Baked Teriyaki Chicken Dessert:  Black Bean Brownies- These are wonderful! I cooked black beans in the crockpot unlike these instructions I just rinsed them and put them in the slow cooker added 2 quarts of water and 4 hours on high and they turned out great! Tuesday: Lunch:  Leftover Chicken  Dinner: Pickup Subs on our way home.  If not possible then soup and bread at home. Wednesday: Since we might be at home due to the snow.  Lunch:   Dinner: Breakfast dinner Thursday: Lunch:  Dinner: Tysons chicken strips Friday: Lunch:  Dinner: Brocolli Cheese Soup Saturday:  Lunch Dinner Super Bean Burritos Use some of the black beans that I made on Monday.  Freeze the rest. How to Defrost Chicken

I'm spending the day with my daughter today inside since it is snowing!  We're trying to relax but that's not easy when she wants to run around.   Right now she is napping and I'm taking a break! She wasn't interested in playing when I was preparing the crockpot for the  Slow Cooker Chicken Parmesan,  it took several attempts at distracting her in order to defrost the chicken and get all of the ingredients  into the pot.   I found a great tip on how to defrost chicken without making it rubbery. I've been thinking more and more about my goals for this year, besides 2010 Financial Challenge goals there are several organizational goals I would like to achieve. One of them is to start menu planning!   I've been reading about Monday Menu planning from so many bloggers that lead me to - I'm an Organizing Junkie.
